The dish nobody should leave Cappadocia without trying: beef tenderloin cooked in its own juices inside a sealed clay pot. We serve it with smoked freekeh pilaf on our terrace overlooking Göreme’s fairy chimneys.

Slow-Cooked Beef Ribs with Damson Plums
Beef ribs cooked patiently over a low flame until the meat slips off the bone, with the sweet-sour depth of damson plums and keşkek, one of Anatolia’s oldest wedding dishes.

Kung Pao Chicken
Born in China’s Sichuan province and loved worldwide, Kung Pao chicken nods to Anatolia at Cratus with Urfa isot pepper: chicken breast stir-fried with garlic, peanuts and a glossy sweet-savoury sauce.

Gerdan-ı Sultan (Roasted Lamb Neck)
As the menu describes it: oven-roasted lamb neck with çimuçiri sauce (red onion, isot pepper, lemon zest) and orzo risotto (arpa şehriye). The menu also lists salt, black pepper, butter, Parmesan, kaşar cheese and parsley.

What to eat in Göreme
Everyone who comes to Cappadocia ends up asking the same question: what should we eat here? The region’s cooking is shaped by the steppe climate of Central Anatolia. Grains, dried fruit, meat slow-cooked in clay pots and wine from the local vineyards form its backbone, and dishes such as pottery kebab, mantı dumplings and poached pears turn up on tables across Göreme, Ürgüp and Avanos.
Cratus Premium Restaurant describes itself as a world-cuisine restaurant. On our menu, Cappadocian classics sit next to plates from the Mediterranean, Italy and China. On the terrace, facing the fairy chimneys
Our restaurant is a 90-seat terrace on the top floor of Cratus Stone Palace in Göreme. In the morning you can watch the balloons rise out of the valley, and in the evening the sunset turns the fairy chimneys orange. We are open every day from 08:00 to 23:00. For sunset hours in particular, we recommend booking a terrace table in advance.
